This is a rich and decadent cure lending itself perfectly to the fatty nature of the free-range rare breed pigs that we use. With ta hint of star anise, black pepper & corriander seed really coming complimenting the creaminess of the fat.

This is one of our favourites which won two gold stars in the 2022 Great Taste Awards giving it the recognition we feel it deserves. Here’s some of the judges feedback.

“Wonderful glossy slices of ham with an excellent ratio of fat to meat and a rich porky aroma. Soft, unctuous flesh melts in the mouth to give a wonderful mouthfeel - the flavour profile is delightful and well judged - sweet - spicy - with gentle background smoke - but the pork shines through. This is so well balanced with all the different ingredients working in harmony”

“This fine looking charcuterie has a lovely shine to it without being greasy. There is a wonderful, delicate aroma of smoke on the nose. Taste wise the flavours played in the judges' mouths delicately, the star anise and black pepper developing alongside the butteriness of the delicious fat. This charcuterie is fresh tasting and there is a great balance between meat and spices which we loved. An excellent and well balanced product.”

“A delightful example of charcuterie, with the glorious aromas of the spices and sweetness of the pork loin. The thin cut allows a little translucence to emphasise the glisten and then in the mouth, the sweetness arrives first, then the salty notes with the anise adding a lovely top note.”
